Pub Cookies

Richard and some of his co-workers were having a craft beer exchange at work on Thursday. I decided that was the perfect reason to bake! I wasn’t sure what I wanted to bake. I started by searching through my pile of recipes we cut out the of the food network magazines. There I found a brownie recipe that used beer in it. I didn’t have everything to make this specific recipe, but I thought it was a good jumping off point to search for a new recipe.

I sent Richard 3 different ideas (two different types of cookies and a different brownie recipe). He decided on Pub Cookies. So… that’s what I made!

Pub Cookies

  • 12 ounces stout beer
  • 3/4 cup butter softened
  • 2/3 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg plus 1 yolk
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 3/4 cup bread flour (this will make them chewy)
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 bag dark chocolate chips (I didn’t measure these I just dumped the bag)
  • 1 cup pretzel twists, broken into pieces

  1. Put the beer in a sauce pan over medium heat. Cook down the beer until you have about 1 Tbsp of beer “extract” (watch the pan, I got distracted and my beer boiled over… oops!)
  2. Cream butter and sugars
  3. Add egg and yolk
  4. Add vanilla and beer extracts
  5. In a separate bowl whisk together flours, cornstarch, baking soda and salt
  6. Add dry to wet ingredients until just combined
  7. Stir in chips and pretzels
  8. Dish cookies onto a cookie sheet and put into the fridge for at least 3 hours
  9. Heat oven to 350
  10. Bake 12-20 min (start checking around 12 min, my batches both took about 14 min)

These cookies do NOT taste like beer. Yes this is a strong beer and it was concentrated by cooking out the water, but it still didn’t taste like beer in a chocolate chip cookie. There is slight bitter taste that brings out those notes in the chocolate chips. The cookies are very chewy and have a great chocolate chip cookie flavor. The hit of pretzel adds an additional salty feature. (The original recipe calls for honey roasted peanuts. I would add peanuts, but not honey roasted)

Wednesday rambles

It’s Wednesday. They are finishing up the work on our yard today! I’m so ready for everything to be done and turned over to us. I’m not looking forward to having to water the lawn and he mud that will result until the backyard grows in, but it is on the final upswing.

The boys and I went to the $1 movies today. We saw Despicable Me 2. I love these movies, they are too funny and they have a good sound track. I did feel like I was struggling to focus on the movie. I thought it was funny that the first comment the boys made was, hey these seats do not recline! The last few movies we have gone to see have been in the premium theaters with the reclining leather seats. Oh the horror of having to sit in real movie seats instead of the fancy ones.

Richard asked me to make 7 layer bars so I made those today. I brought some out to the workers. One said, “These are the best out of all you’ve brought us.” Thanks… the old stand-byes are always a sweet treat. I also go heavy cream to make ice cream this week. Colby asked for peanut butter ice cream with chocolate chips. I’ll have to get working on that tomorrow. I might make chocolate ice cream with Oreos for the second batch, we will see.

I shouldn’t be eating any of this. Richard and I have been doing a good job at getting up and working out. I need to make sure my eating is on point to go with that, then maybe I could lose a few pounds and inches? It is hard when you are a person who loves to cook and bake to not then eat the products you produce. I have been doing a better job with my meals. I am having overnight oats for breakfast and salad for lunch. It’s the in between times that are hard. I have been snacking on veggies chips. Have you tried Terra Chips? OMG they are so yummy. I know they are healthier than potato chips, but yes I also know they are not healthy foods. But, when you want a chip I guess it is a better option?

Well, the boys are home. I should go check on the beef and peppers we are having for dinner tonight. I should mop the floors, but I think I’ll go read the book I got from the library instead.

Chocolate Chip Cookie Day

Today is national chocolate chip cookie day. Soooo I made cookies. I picked Colby up early from school. They were having field day this afternoon and decided that he would be better of coming home to rest instead. So when I got home I began making the homemade fish sticks for dinner and chocolate chip cookies.

Who doesn’t love a gooey, chewy chocolate chip cookie? This one is from Duff’s cookbook

Fat and Chewy Cookies

INGREDIENTS
  • 2 1/4 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. kosher salt
  • sticks butter, softened
  • 3/4 c. granulated sugar
  • 3/4 c. lightly packed brown sugar
  • extra-large eggs
  • 1 tsp. pure vanilla extract
  • 2 c. semisweet chocolate chips
DIRECTIONS
  1. Preheat oven to 375°.
  2. In a medium bowl, mix together flour, baking soda, and salt.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and both sugars until light and fluffy. Mix in eggs and vanilla.
  4. Add flour mixture and mix until well combined. Stir in chocolate chips.
  5. Eat a bunch of the cookie dough (kidding!).
  6. Scoop what’s left of the cookie dough onto an ungreased baking sheet.
  7. Bake cookies 8 to 12 minutes, depending on how gooey you want those centers to be.
  8. Let cool 5 minutes, then transfer cookies to a wire rack.

April 29th

I am typing this up on my old laptop since my newer laptop was just stripped of everything so it can be shipped off to get fixed! The stupid thing would freeze up all the time. Sometimes it would go into sleep mode and not come out unless you did a hard reboot on it. Other times it would just shut down and not want to turn on. It’s not even a year old. GESH!

But, this means I’m using my older laptop which feels like a monster compared to the one I usually use. Plus my older one’s batter does not hold a charge so it is not portable as it needs to be plugged in to work.

Ahhh yes I know 1st world problems.

Oh on a different note of frustration. Last night I tried again to make scones. Andddd yet again, these became bird food. I give up! I quit! I am not a scone maker. I will just have to enjoy my scones outside the house.

Now I guess this isn’t a bad thing. It’s not like I’m giving up on vegetables or fruits or salad or grilled chicken. I’m giving up on making something I don’t actually need to have or eat. But, that doesn’t mean I’m happy about it.

Now I feel like I should bake something else to prove that I can still bake, it is just that scones are not my forte! But, what?

Enough rumbles and grumbles for one post. It is almost May. The sun is out and the temp is up to 62F (it was 35F when I left for work this morning). I want a nice day so I can wear some of my new shoes. Did I tell you I bought myself new spring shoes? I will have to post pictures soon.

Chocolate Chip cookies with melted butter

Today was one of “Those Days” at work. One of my favorite ways to de-stress is to bake. I didn’t decide to bake until it was too late to soften butter, so off to the web I went in search of a recipe.

I found the recipe for “The Best Soft Chocolate Chip Cookies” on Pinch of Yum

I pulled all the ingredients together and got to baking.

Chocolate Chip Cookies with melted butter

  • 8 tablespoons of salted butter
  • 1/2 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup chocolate chips (I used Ghirardelli’s grand chips)
  1. Preheat oven to 350
  2. Melt butter
  3. mix together butter and sugars
  4. incorporate vanilla and egg
  5. mix in dry ingredients
  6. when mixed to the proper cookie dough consistency, add in chocolate chips
  7. bake 9-11 min (do not overbake) I let mine go a bit under actually
  8. enjoy!

Applesauce Oatmeal Muffins

So, yesterday when I walked in the house, I decided that I wanted to bake. It wasn’t because I’d had a tough day or anything it just was a need to bake. (granted the world imploded after the kids got home.)

I decided that since I had homemade applesauce from the weekend that I’d use it to make applesauce muffins. I found a recipe for healthy applesauce oat muffins on Tastes Better from Scratch, and decided to alter it.

Applesauce Oatmeal Muffins

  • 1 cup applesauce (I used homemade)
  • 1/2 cup milk
  • 1 large egg
  • 4 Tablespoons butter , melted 
  • 1/3 cup granulated sugar
  • 1 cup old-fashioned rolled oats
  • 1/2 cup AP flour
  • 1/4 cup wheat germ
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • Microplane a few swipes of nutmeg

 

  1. Preheat oven to 375. line muffin pan with liner or spray with pam
  2. Stir together wet ingredients in one bowl (applesauce, milk, egg, butter and sugar)
  3. Whisk dry ingredients in a large bowl (flour, wheat germ, baking powder, baking soda, cinnamon and nutmeg
  4. Stir wet mixture into dry mixture until just mixed (do not over mix)
  5. scoop into muffin liners
  6. bake 15-20 min or until a toothpick comes out clear
  7. cool completely

P B & J sandwich cookies

I have been reading the Hanna Swensen Mystery series by Joanne Fluke. AJ at A Petite Slice of Life, mentioned that she not only had read these books, but made many of the recipes in the books. That was incentive enough to test one out myself.

I just finished reading Blueberry Muffin Murder and one of the recipes in that book was  Peanut Butter Melts. One of the suggestions she made was turning them into peanut butter jelly sandwich cookies. Well…. as it turns out Richard, Colby and I had just talked about pb & J cookies this past week. When we were in Amish country we purchased 4 jars of jelly. Colby has been working on polishing off the strawberry jelly and loving it with peanut butter.

Sooooo the baker in me decided to use another jar of jelly to make pb & j cookies.

Peanut Butter and Jelly Sandwich Cookies -adapted from Peanut Butter melts by Joanne Fluke

  • 1 cup melted butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 tsp vanilla
  • 1.5 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup peanut butter
  • 2 eggs
  • 2.5 cups flour
  • jar of jelly (I used raspberry)
  1. Preheat oven to  375
  2. Melt butter in microwave add both sugars and vanilla mix well
  3. Add baking soda, baking powder and salt. mix until incorporated
  4. Add peanut butter to the mixture
  5. Add in eggs one at a time
  6. Add flour and mix until all ingredients are fully incorporated
  7. Use small cookie scoop to dish out the dough, put onto cookie sheet leaving space between balls. press balls flatter with the tines of a fork in a crisscross pattern
  8. Bake at 375 for 6-8 min (if making bigger cookies bake 8-10 min) cookies should just start to golden on the bottoms.
  9. cool 2 min on sheet and then move to cooling rack
  10. when fully cooled spread jelly on the bottom of one pb cookie, top with another cookie to make sandwiches.
  11. I then put all the cookie sandwiches in the fridge to finish cooling and let the jelly set up

P1000282Colby loved these cookies. He had one last night and then quickly packed another to have at camp today for snack. He really wanted to pack 2 cookies but since he was having a PB&J sandwich for lunch I didn’t think he needed two cookies. I”m sure he will have one as a snack when he gets back from camp today.

Richard said they had a really good peanut butter flavor and liked them. He took a tin of them into work today to share with his co-workers.

I would tell you my opinion, but I haven’t had any yet. I’m using my will power! As I’ve mentioned I’m trying to eat healthier, working out and following a specific program. I do get a cheat day and plan on having that this weekend, so trust me I’ll have one then!

chocolate and peanut butter chip cookies

IMG_20180628_134437.jpgYesterday we had a rainy day so I decided it was a good day to make cookies. I decided to make chocolate chip cookies. I have found a new favorite chocolate chip cookie recipe from my Duff Bakes cookbook. This is the chewy chocolate chip cookie recipe, he as a crispy one too, but I don’t like that one… sorry Duff!

This time I decided to switch it up a bit and add in peanut butter chips.

Chocolate Chip/Peanut Butter Chip cookies (adapted from Duff Goldman’s Fat and Chewy Chocolate chip cookies)

  • 2 1/4 c. AP Flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 c. butter softened
  • 3/4 c. brown sugar
  • 3/4 c. granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 c. dark chocolate chips
  • 1 c. pb chips
  1. preheat oven to 375
  2. cream together butter and sugars until light and fluffy
  3. add in eggs and vanilla
  4. add flour, baking soda and salt
  5. stir in chips (pb and chocolate)
  6. scoop onto ungreased cookie sheets (I used my silpats)
  7. bake cookies for 8-12 min depending on how gooey you want the centers to be

These cookies are soooooo yummy. The center is soft and with the perfect level of chew.  The cookie base itself is super buttery and there is just the right level of salt. The combination of the chocolate and peanut butter is balanced and adds a great sweetness. As you can see, Colby tried them too and he also loved them. Blake doesn’t like pb chips, but he has had this when I made it with just chocolate chips and liked it.  Hmmm I think next time I’ll do chocolate chips, pretzels and butterscotch chips. Ummm yummy!

Today’s rambling thoughts

The last two mornings I’ve had to get up on shovel. Neither day had a lot of snow. Monday probably had 2-3 inches and today had a dusting to an inch. But, I am one of those people who has to have a clear driveway. I am obsessed with being able to see the blacktop!

Typically I go out and shovel the driveway before Richard leaves for work and then after he leaves I go out and clean off where his truck is in the driveway, the walkway, the sidewalk and the back steps. Yesterday, Richard took my car to work so the snow around the truck never got shoveled. This meant there was more snow there. Also, the snow melted yesterday and refroze under the truck. I found that ice today and manage to slip on it.  Oh well… I didn’t hurt anything but my ego.

Today I left the house for the first time in a while. Last week I wasn’t feeling well so there were quite a few days that I didn’t go anywhere. Today I went to the grocery store. This meant that I needed to make a grocery list and menu plan yesterday. I hate going to the store without a plan. I’ve lived here since June and I still am trying to figure out the grocery store.

I’ve been wanting to make something new, but I didn’t figure out something new to try this week. I did come up with a few meals that we haven’t had in a while, but I’m going to search for new meals, I need a change. We are having FFY (fend for yourself), baked potato soup and homemade bread/rolls, meatloaf muffins, chicken cordon bleu, and pork tenderloin. Saturday we are going to go out to eat since we are going to see Monster Jam.

The other thing I’m planning to make today is oatmeal raisin cookies. Colby has been asking for these the last few weeks. The last few things I baked have been something peanut butter so oatmeal raisin is a good change. I do have another peanut butter cookie recipe in my head, maybe next week.

Yesterday I spent some time working on a new kit for my Teachers Pay Teacher’s store. I love that I have the time to work on these kits that I can sell at a reasonable price for other teachers. I am almost done with the one I started yesterday and I have a few more ideas brewing for the next ones I’ll make.

I’m glad that I’m feeling more human again. My head is still stuffed, but it’s not slowing me down anymore. Yesterday I felt productive as I got the house cleaned, two blog posts, made dinner and worked on the TPT kit. And, that was after shoveling. Today I am having another productive day. Yep, I feel like me again.
